Hannah Ford is currently completing a joint PhD in Sensory and Consumer Science between the University of Nottingham and the University of Adelaide. Her field of research is focused on understanding consumer behaviour regarding sustainable food and beverages.
In her current research project, Hannah is exploring consumer perceptions and choice behaviour towards sustainable fish from conventional sources, alongside novel fish alternatives. Hannah is applying choice-based conjoint analysis to understand consumer trade-offs towards these products. Findings will provide a greater insight into how novel fish alternatives compete against conventional counterparts across consumer segments, beneficial to marketing and food product developers.
